Strawberry Cheesecake Cookies

Ingredients

For the Cookies:

  • 280g + 1 tbsp plain flour

  • 1 tsp baking powder

  • ½ tsp salt

  • 170g unsalted butter, softened

  • 150g brown sugar

  • 100g granulated sugar

  • 1 large egg + 1 egg yolk

  • 2 tsp vanilla extract

For the Cream Cheese Frosting:

  • 100ml double cream

  • ½ tsp vanilla extract

  • 1 tbsp icing sugar

  • 100g cream cheese

For the Topping:

  • 100g fresh strawberries, halved

  • Raspberry jam (for spreading)

Makes: 8 Cookies


Method

Make the Cookies

Step 1

Preheat your oven to 170°C (fan) and line two baking trays with parchment paper.

Step 2

In a stand mixer, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

Step 3

Add the egg and egg yolk, mixing well. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Step 6

Scoop the dough into 8 large balls and place them spaced apart on the prepared trays.

Bake for 9 minutes, until just set around the edges but still soft in the center.
Let the cookies cool completely on a wire rack.

Make the Frosting

Step 7

While the cookies are baking, add the double cream, vanilla extract, and icing sugar to a bowl.

Using a handheld or stand mixer, whip until lightly thickened.
