No Chill Raspberry & White Chocolate Cookies
These cookies are packed with frozen raspberries, and white chocolate chips to give the perfect balanced flavour.
The frozen raspberries mean you get the full raspberry flavour without the sogginess of fresh raspberries. The frozen raspberries also act to cool the cookie dough down meaning you don’t need to chill the dough before baking.
Ingredients
280g + 1 tbsp plain flour
1 tsp bicarbonate of soda
½ tsp salt
170g butter, melted and slightly cooled
150g brown sugar
100g granulated sugar
1 large egg + egg yolk
2 tsp vanilla extract
100g White chocolate chips
180g white chocolate
160g raspberries (frozen)

Makes approx 18 cookies
Method
Step 1.
Preheat the oven to 175°C.
Step 2.
Line 3 large baking trays with greaseproof paper or silicone mats.
Step 3.
Melt the butter and let it cool for a few minutes.
Step 4.
While the butter cools, chop the white chocolate into small pieces.
Step 5.
Add the flour, salt, and bicarbonate of soda, to a separate bowl and then set aside.
Step 6.
Using a stand mixer, beat the cooled butter and sugars together until smooth and well combined.
Step 7.
Add the egg and egg yolk to the mixture and continue beating until incorporated.
Step 8.
Mix in the vanilla extract until fully combined.
Step 9.
Gradually add the flour mixture and beat on a low speed until just combined—don’t over-mix.
Step 10.
Add the frozen raspberries, chopped white chocolate and white chocolate chips, mixing until evenly distributed.
Step 11.
Scoop the dough using an ice cream scoop (I use a medium one and typically get 18 cookies). Make sure to space the dough balls apart on the trays as they will spread while baking—6 cookies per tray works well.
Step 12.
Bake for 11 minutes. Remember that the cookies will continue to cook on the tray after you remove them, so don’t wait for them to firm up in the oven.
Step 13.
To give your cookies that professionally baked look, gently push a few chocolate chips into the tops of your cookies.
Step 14.
Let the cookies cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.
