Oat Raisin Cookies
Ingredients
125g plain flour
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
150g old-fashioned rolled oats
115g unsalted butter(softened)
100g packed light or dark brown sugar
50g granulated sugar
1 medium egg (room temperature)
1 teaspoon pure vanilla extract
150g raisins
Method
Step 1
Pre-heat the oven to 175C
Step 2
Melt the butter in the microwave at 30 second intervals
Step 3
Add the melted butter, the brown sugar and granulated sugar to a stand mixer and using a paddle attachment, mix until combined
Step 4
Add the egg and the vanilla extract to the butter sugar mixture and beat together until combined
Step 5
Add the rolled oats to the butter sugar mixture and mix until the oats are fully covered.
Step 6
In a separate bowl, combine the flour, cinnamon, baking soda, salt and raisins. Add to the oats mixture and using a stand mixer on a low setting beat together until the flour is just incorporated.
Step 7
Using a medium ice cream scoop, portion out the cookies on to two large baking trays, roughly 6-7 per tray.
Step 8
Bake at 175C for 14 minutes. Once baked, allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
