Easy Chocolate and Pistachio Fudge

 

Scrumptious gooey chocolate fudge, made in one pan! You’ll be sure to impress your guests by serving this up. 

I use a mini food processor to blitz my pistachios but you could use the old rolling pin method, by popping them into a freezer bag and giving them a good bashing. It’s also up to you how big you want your pistachios pieces to be, having larger pieces would yield the same results. 

Ingredients 

  • 350g dark chocolate (chopped, minimum 70% cocoa solids)

  • 1 x 397g can condensed milk

  • 30g butter, cut into small pieces

  • pinch of salt

  • 150g shelled pistachios

Method 

  1. Place the pistachios into a mini food processor and pulse for about 20 seconds, you don’t want the pieces to be too small here

  2. Like the baking tray with greaseproof paper

  3. Add the chopped chocolate, condensed milk, butter and salt to a sauce pan over a low heat and gently whisk until all the ingredients have melted and are combined 

  4. Pour the mixture into the lined baking tray and smooth out to obtain an even surface 

  5. Sprinkle the blended pistachios over the top of the chocolate mix 

  6. Pop the tray into the fridge for at least 3 hours 

  7. Once your fudge has set, remove from the fridge and cut into small squares and enjoy 

Hint: the fudge will keep in the freezer for up to 1 month, and you can enjoy straight from the freezer, there’s no need to thaw before eating.
