Easy Cheesy Sausage Pasta
This is a delicious cheesy, sausage pasta to end a busy day with. Taking 20 minutes to make it’s super low effort. Most of the ingredients you’ll probably have in your cupboards already, and I even use frozen spinach because I hate it when I don't finish the bag of fresh spinach and end up throwing half of it away. So I switched to frozen so that I always have it in the freezer and just add it when I need, but if you’d prefer use fresh baby spinach.
I used fusilli but other pastas would work too such as penne or rigatoni.
The pan to make the sauce I use my GreenPan. I bought this last year when I was considering buying the Always Pan, and the Green Pan is my favourite pan to cook with! I definitely don’t regret getting that over the Always Pan, and at less than half the price of the Always Pan it was worth every penny!
Serves 4
Cook time 20 minutes
Ingredients
175g fusilli pasta
2x Tinned Tomatoes
2 tbs Tomato puree
4x cumberland Sausages
2 tsp Mixed herbs
2x Garlic cloves
50g water
Salt and pepper to season
Vegetable stock cube
50g Baby spinach 0r 3 frozen spinach blocks
50g grated mozzarella
Method
Step 1
Boil the kettle for the pasta, add to a medium saucepan, salt the water and cook the pasta for 9 minutes
Step 2
While the pasta cooks, heat a drizzle of oil in a large pan
Step 3
Remove the skin from the sausages by taking a sharp knife down the length of the sausage and peel off the skin. Discard of the skin, and add the sausage meat to the pan with oil, breaking it up with a wooden spoon
Step 4
Finely chop, or grate the garlic
Once the sausage has browned, add the garlic to the pan and cook on a medium heat for 1 minute
Step 5
Add the tomato puree, tinned tomatoes, water, seasoning, and mixed herbs. Crumble the stock cube into the pan too. Mix all together and leave to simmer for 4 minutes.
Add the spinach and allow to simmer for and other 4 minutes or until wilted.
Step 6
Drain the pasta, and add to the tomato sauce. Mix through so the pasta is coated in the sauce.
Add the grated mozzarella over the top while the pasta and sauce are still in the pan
Mix through so the cheese melts and is coating the pasta, and serve.
