Gooey Double Chocolate Cookies

Ingredients 

125g chocolate

50g butter

67g plain flour

30g cocoa powder

95g brown sugar

45g granulated sugar

2 egg

Makes 12 cookies | Bake time: 10 minutes

Method

Step 1

Pre-heat the oven to 180℃ fan 

Step 2

Combine the butter and chocolate in a bowl and melt together until smooth

Step 3

In a separate bowl mix together the sugars and egg and whisk util pale

Step 4

Add the chocolate mix into the sugar and eggs and continue to whisk until combined 

Step 5

Now add the flour and cocoa powder and mix together using the paddle attachment, don’t over mix

Step 6

Using a medium ice cream scoop, scoop  the the mix on a lined tray, leaving room for them to spread out as they bake

You can fit about 8 scoops on a large tray

Step 7

Sprinkle over a couple of extra chocolate chips on to each scoop of batter 

Bake for 10 minutes.
