Double Chocolate Chip Muffins

These treats combine rich cocoa flavour, chocolate chips and a moist, tender crumb, making them perfect for a snack, or dessert.

Muffins are the perfect treat to whip up, eat warm and fresh or freeze for anytime snack!

Ingredients

250g plain flour

200g granulated sugar

40g cocoa powder

1 tsp baking soda

1/2 tsp salt

315g chocolate chips

2 medium eggs, at room temperature

185g full fat sour cream

120ml vegetable oil

120ml buttermilk

1 tsp vanilla extract

Method

Step 1

Preheat the oven to 220C, line a 12 portion muffin tin with muffin cases..

Step 2

In a large bowl, add the flour, sugar, cocoa powder , baking soda, salt and chocolate chips. Whisk the ingredients together.

Step 3

Add the eggs, sour cream, vegetable oil, buttermilk and vanilla extract in a bowl, whisk together until combined. 

Step 4

Make a well in the middle of your dry ingredients, pour the wet ingredients in to the well. Gently fold the mixture until combined, do not overmix.

Step 5

Evenly portion out the mixture to the 12 muffin cases, pop them in the oven at 220C for 5 minutes. After 5 minutes, without opening the oven, turn the oven down to 177C and continue to bake for 17minutes. 

Step 6

Remove from the oven and allow to cool in the tin for 10 minutes.
