Double chocolate and orange muffin

Ingredients

Dry Ingredients

  • 350g plain flour

  • 40g cocoa powder

  • 4tsp baking powder

  • Pinch salt

  • Zest of 2 oranges 

Wet Ingredients

  • 2 large eggs 

  • 80g butter (slightly melted)

  • 100g buttermilk

  • 200g granulated sugar

  • 80g veg oil

  • 240g milk (room temp)

  • 1tsp orange extract

  • 1 cup dark chocolate chips 

Method

Step 1

Preheat oven to 200°C Fan, prepare 12 muffin cases

Step 2

Add the flour, cocoa powder, baking powder, salt and zest of the oranges into a bowl, whisk together and set a side for a moment

Step 3

In a separate bowl beat the sugar and butter on high speed with paddle attachment until creamed together, scraping down the sides

Step 4

Add the eggs one at a time beating in between to combine 

Then add the vanilla and buttermilk  and beat until combined

Mix together the warm milk and oil together, and add to the wet mixture. Continue to mix on slow speed for 1 minute.

Step 5

Add the dry ingredients to the wet and beat on slow speed until just before combined, be careful not to over mix here.

Step 6

Add in the chocolate chips and fold in gently using the slowest speed of the stand mixture 

Step 7

Spoon into the prepared cases 

Place the muffins in the oven and bake for 5 minutes at 200°C, after 5 mins reduce the temp to 160°C and bake for 20 mins, turn up the heat to 170° and bake for another 2 mins. Do not remove the muffins from the oven until after at least 25 mins
